
This easy greek protein breakfast bowl fuses traditional Greek flavors and adds a healthy fusion twist for a Mediterranean meal that will brighten your morning. Ingredients
12 eggs
¼ cup plain greek yogurt
1 teaspoon onion powder
1 teaspoon granulated garlic
½ teaspoon salt
½ teaspoon pepper
1 teaspoon olive oil
5 ounces baby spinach
1 pint cherry tomatoes, halved
1 cup feta cheese
2 cups cooked quinoa
Optional: Diced onions, bell peppers and your other favorite veggies
Method to make greek protein breakfast bowl
- Mix the eggs, greek yogurt, onion powder, granulated garlic, salt, and pepper.
- In a frying pan, heat the oil and saute the spinach for a couple minutes until it is wilted, then stir in the tomatoes. If you wish, you can also add your favorite diced veggies, such as bell pepper and onions.
- Pour in the egg mix and scramble for 8-10 minutes, until the eggs are the consistency you prefer, then add in the quinoa and cheese and enjoy.
