Recipe: Greek Protein Breakfast Bowl

This easy greek protein breakfast bowl fuses traditional Greek flavors and adds a healthy fusion twist for a Mediterranean meal that will brighten your morning. You’ll feel satisfied all morning from the lean protein in the eggs, cheese and yogurt, while the tomatoes in this healthy breakfast amp provide a rich dose of anti-aging lycopene.

Ingredients

12 eggs

¼ cup plain greek yogurt

1 teaspoon onion powder

1 teaspoon granulated garlic

½ teaspoon salt

½ teaspoon pepper

1 teaspoon olive oil

5 ounces baby spinach

1 pint cherry tomatoes, halved

1 cup feta cheese

2 cups cooked quinoa

Optional: Diced onions, bell peppers and your other favorite veggies

 

Method to make greek protein breakfast bowl

  1. Mix the eggs, greek yogurt, onion powder, granulated garlic, salt, and pepper.
  2. In a frying pan, heat the oil and saute the spinach for a couple minutes until it is wilted, then stir in the tomatoes. If you wish, you can also add your favorite diced veggies, such as bell pepper and onions.
  3. Pour in the egg mix and scramble for 8-10 minutes, until the eggs are the consistency you prefer, then add in the quinoa and cheese and enjoy.
